Mastic or also known as “The Tears of Chios”
Mastic resin is derived from the mastic tree (Pistacia lentiscus). It is also known as the tears of Chios because it is traditionally produced on the Greek island of Chios, and it is produced in “tears” or droplets, similar to other natural resins.
Mastic is a brittle, translucent resin that is excreted by the resin glands of certain trees. When chewed, the resin softens and transforms into a bright white, opaque gum. At first, the flavor is bitter, but after some chewing, it releases a refreshing flavor similar to pine and cedar.
Corinthian Raisin – Stafides
A raisin is a dried grape. Raisins are divided into two types, black and white. The white variety produced in Greece is called sultana. Stafides can be eaten plain as a sweet but are also frequently added to cakes and various sweets. The main production process involves drying the fruit, mainly black grapes, in the sun for a few days (about 10).
The best-known variety of these raisins is the Corinthian raisin, which is 80% produced in Greece.
